What is actually stored in EXIF data?
GPS coordinates and altitude, the exact capture timestamp, camera make and model, often a unique camera serial number, full exposure settings, which software edited the file, and sometimes an embedded thumbnail. On older software that thumbnail was not always updated after cropping, which has exposed content people believed they had removed.
Do social networks already remove this?
The major platforms do strip EXIF from files other users download — though they read it first for their own purposes. Almost everything else preserves it: email attachments, cloud storage links, forums, personal sites and marketplace listings.
Does removing metadata change how the image looks?
