How do I extract every other page?
There is no alternating pattern option. Use Range mode and list the pages explicitly, for example 1, 3, 5, 7, 9. For long documents this is tedious, so consider splitting every 1 page and reassembling the ones you want.
Is extracting better than compressing for reducing file size?
Usually, yes. If you need 12 pages out of 200, extracting removes 94% of the content with zero quality loss. Compression tries to shrink content you do not need in the first place.
